For a festive holiday luncheon, serve this luscious sandwich of blinis, smoked salmon and caviar.
PETROSSIAN CAVIAR CLUB SANDWICH
Makes 6 sandwiches as a lunch entree
24 blinis at room temperature
2 large tomatoes, each cut thinly into six slices
Mesclun greens sufficient for six sandwiches
6 slices bacon, cooked on a baking sheet in the oven until crisp and cut in half (optional)
12 Petrossian smoked salmon slices (about 1 lb.)
For each sandwich, arrange one tomato slice, a handful of greens, and one slice of smoked salmon on one of the blini.
Top with another blini.
Repeat with lettuce, tomato and another slice of smoked salmon.
Add two half-slices of bacon if desired.
Add another blini to each stack.
Cover with a thick layer of Petrossian caviar and close with the final blini.
Cut into quarters and skewer each quarter with a toothpick.
Serve with homemade potato chips.
