Cherry Flan

3 cups pitted Bing cherries

1-1/4 cups milk

3 eggs

1 tablespoon vanilla extract

2/3 cup flour

1/8 teaspoon salt

1/3 cup powdered sugar

Powdered sugar to serve

Preheat the oven to 350. Drain cherries as necessary. Put remaining ingredients into a blender in the order listed. Cover and blend at top speed for 1 minute.

Lightly butter a 9-inch pie plate or baking dish. Pour 1/4-inch layer of batter into dish. Bake in oven until a film of batter has set on the bottom of dish. Remove from oven and add cherries, and sprinkle over 1/3 cup sugar. Pour on the rest of the batter. Smooth the top of the batter with the back of a spoon. Bake in the oven for about an hour or until puffed and browned. Sprinkle with powdered sugar and serve.

Serves 6 to 8.
