Young chef Laurent Cesne has just overseen a dramatic renovation of his family's 26-room hotel, redone along the lines of a sleek white ocean liner, with staggered terraces lined by white railings and lit at night by big white lamps that look like giant Chinese lanterns. Jean-Marie Boelen and his wife Christine, Boelen converted this half-timbered 17th- and 18th-century farm near Deauville into a 15-room inn. For less than $200 room number 17 is one of the nicest, occupying part of the dormer attic of a half-timbered barn, with bleached oak floors, taupe walls, cherry-and-cream checked curtains. A fluffy duvet covered a very comfortable bed, with excellent reading lights-a welcome rarity.

Part of the ancestral home of author Alexis de Tocqueville on Normandy's Cotentin Peninsula has been transformed into a three-floor, five-bedroom guest pavilion for weekly rental, with spacious, beautifully appointed bedrooms—many with the family's own period furnishings, a fully equipped kitchen and adjoining bathrooms that are a clever mix of antique fittings and contemporary comfort. The introductory price for the newly opened guest pavilion is €5,000 per week.
