The formerly trendy "world food" restaurant near the Champs Elysées that's part of the Alain Ducasse empire has been brilliantly rebooted as a showcase for health-conscious, ecologically correct cooking, proving that environmental responsibility and gastronomy aren't mutually exclusive. Try the quinoa casserole with vegetables, poached egg with bulgur wheat and shaved mushrooms, and yogurt-glossed lieu jaune (yellow pollack) with vegetable-stuffed gyoza.
