Grilled Hazelnut Butter Sandwiches

Éric Kayser's tip: This recipe turns day-old croissants into a delicious snack.

Serves 4
Preparation time: 5 minutes
Cooking time: 10 minutes

Ingredients
1 1/2 tablespoons (20 g) butter
2 1/2 tablespoons or 1 oz. (25 g)
Whole hazelnuts
4 croissants
4 slices of Comté or other full-flavored hard cheese
White pepper for seasoning

Sauté the hazelnuts in 2 teaspoons (10 g) of butter. Cut the croissants in 2 to make sandwiches.

Grilled Hazelnut Butter Sandwiches


Place a slice of cheese on the lower half and scatter with hazelnuts. Season with pepper, and cover with the other croissant half.

In the same skillet, over medium heat, melt the rest of the butter until it starts to brown (hazelnut color). Lower the temperature and gently panfry the croissants on each side for 3 minutes.

Serve with cherry tomatoes.
